How to Make Carrot Top Pesto From Kitchen Scraps

While you can’t regrow a whole carrot from your discarded carrot tops, you can regrow the tender and succulent green carrot tops, which can make a cracking pesto!

Place the cut-off end of a carrot in a shallow bowl of water. The water doesn’t need to be too deep, it just needs to be touching the edges of the carrot top.  

Within a few days you will see lovely green shoots from the top of your carrot. Keep the water topped up and when you have a nice bunch get ready to make your pesto!

Ingredients

  • 1 bunch carrot tops

  • 3 cloves garlic, minced

  • 1 lemon, zest and juice

  • 1/3 cup Parmesan cheese

  • 1/3 to 1/2 cup olive oil

  • (optional) salt to taste

Method: 

  1. Pop all the ingredients into a food processor, starting with the lesser amount of olive oil. Pulse a few times until well combined. Add additional olive oil as needed to reach desired pesto texture.

  2. Season to taste with salt.

  3. Serve pesto over pasta, or whatever your stomach desires!
