While you can’t regrow a whole carrot from your discarded carrot tops, you can regrow the tender and succulent green carrot tops, which can make a cracking pesto!
Place the cut-off end of a carrot in a shallow bowl of water. The water doesn’t need to be too deep, it just needs to be touching the edges of the carrot top.
Within a few days you will see lovely green shoots from the top of your carrot. Keep the water topped up and when you have a nice bunch get ready to make your pesto!
- 1 bunch carrot tops
- 3 cloves garlic, minced
- 1 lemon, zest and juice
- 1/3 cup Parmesan cheese
- 1/3 to 1/2 cup olive oil
- (optional) salt to taste
- Pop all the ingredients into a food processor, starting with the lesser amount of olive oil. Pulse a few times until well combined. Add additional olive oil as needed to reach desired pesto texture.
- Season to taste with salt.
- Serve pesto over pasta, or whatever your stomach desires!
